2010-06-24 09:08:10 - Mobile Picnic Meals Made Easy With summer in full swing, we challenged seven local Executive Chefs to put together mobile picnic meals that reflect their culinary point of view.
We’ve made getting the picnic fare easy (most chef’s only need a few hours notice), convenient (locations range from Mound to Minneapolis) and delicious (did I mention that Chef Royal is a James Beard nominated chef?).

The Herkimer - Picnic in the City: Avocado Lettuce Tomato sandwich, sweet potato fries or potato chips, veggies, triple caff energy drink  Baja Sol - Gluten-Free Picnic: Chips and three choices of salsa, Baja chicken wings w/ jalapeno ranch dressing, jicama sticks, Caribbean Shrimp Salad, Mini Taco Bar, Rice Crispy treat, flavored agua fresca
 Scotty B's - Picnic on the Lake: 3 piece broasted chicken, waffle fries, coleslaw, cookie
 Northern Point: Picnic in Tuscany: Italian marinated shrimp, Caprese Sandwich, 2 Valencia oranges, chocolate biscotti, 1/2 bottle of wine
 Chef Royal: Dinner Picnic at the Cabin: (Appetizer) artisan cheese, cured meet, crispy crackers, dried and fresh fruit. (Main course) pesto grilled NY strip with grilled vine ripe tomato, local goat cheese, roasted mushrooms, sweet onions and organic greens. (Dessert) Cherry turnover
